Salmon is a fabulous source of omega 3 which is necessary for our brains to function well.  It’s also great for our heart and bones so what’s not to like?  This recipe is so simple yet incredibly tasty and will take you less that 25 mins to create.


1/2 packet of smoked salmon ready to eat or a salmon portion cooked as per instructions (approx 20 mins) or a can of salmon

1 handful rocket leaves

1 handful lambs lettuce

1 handful spinach leaves

4 walnut halves

1 teaspoon sunflower seeds

1 teaspoon pumpkin seeds

1 teaspoon raisins

1 tablespoon olive oil

chunk of cucumber diced

6 cherry tomatoes sliced in half

1/2 avocado diced or sliced


Throw all the salad vegetables, seeds and nuts into a serving bowl

Break the salmon into pieces and pop into the salad bowl

Gently mix the salad ingredients together

Drizzle the olive oil over the salad and enjoy!
