Scrambled eggs are a fabulous source of omega 3 which is necessary for our brains to function well.  They are also a great source of protein and great for any woman, especially if we are pressed for time but want to heat something wholesome and natural.  This recipe is so simple yet incredibly tasty and will take you less that 15 minutes to make.


2 eggs whisked so they are light & fluffy and add some ground black pepper to taste

a knob of butter for cooking

3 mushrooms sliced

handful of spinach leaves

1 slice of rye bread

a drizzle of olive oil


Pop the knob of butter into a pan and melt

Pop the whisked eggs into the pan with the melted butter and stir well until the mixture turns firm to taste

Whilst the eggs are cooking, pop the rye bread into a toaster until nice and crisp

Gentle cook the mushrooms in a few teaspoons of water until soft

Pop the rye bread onto a plate, add the spinach onto the rye bread, then add the mushrooms and then the scrambled eggs

Drizzle over the olive oil
